Green Pea Soup
Very easy to prepare, this healthy soup is made with ingredients that are readily available in your kitchen.
Ingredients
Fresh peas 1 cup
Onion (finely chopped) 1
Garlic (few cloves, chopped) 1
Low fat milk ½ cup
Mint- a few sprigs
Salt to taste
Method of Preparation
1.Boil the peas and cool them. Preserve the water used for boiling.
2.Saute onions and garlic in a heavy-bottomed pan till soft and light brown. Add the peas and sauté for another 2-3 minutes. Cool and blend the mixture into a smooth puree.
3.Mix in salt and milk. Boil and then chill. Garnish with mint leaves and serve.
Cold Cucumber Soup
Cucumber, the season’s favorite vegetable and one of best cold soup recipes, comes with a new twist, in the form of this yummy cold soup.
Ingredients
Cucumber (diced into cubes) 2 cups
Cucumber (finely chopped) ½ cup
Low fat milk ½ cup
Low fat yogurt ¼ cup
Low fat butter 2 tsp
Capsicum (finely chopped) 1 tbsp
Mint leaves- a few
Salt to taste
Black pepper to taste
Method of preparation
1.In a non-stick pan, cook the cucumber cubes I 1 ½ cup water on medium flame till it goes soft. Cool it completely.
2.Mix in milk, curd and salt and blend till smooth.
3.Heat butter in a non-stick pan and sauté the chopped cucumber and capsicum in it for 2 minutes.
4.Turn off the flame, add the cucumber mix and stir. Cool and chill in the fridge for half an hour.
5.Garnish with mint leaves and black pepper and serve chilled.
Chilled Beetroot Soup
A super-healthy soup with the goodness of beetroot, great in taste too!
Ingredients
Beetroot (boiled) 80 g
Sour cream 200 ml
Onion (chopped) ½ small
Unsalted butter- a spoonful
Lemon juice 2 tbsp
Cinnamon powder-a little
Ice (crushed)
Method of Preparation
1.Take the butter in a pan and sauté onions in it.
2.Mix it with sour cream, beetroot and lemon juice and blend to make a puree.
3.Add ice to the puree. Sprinkle cinnamon powder and garnish with sour cream. Serve.
Red Pepper Gazpacho

Red bell peppers (cored, deseeded, roasted and chopped) 5
Tomatoes (small) 2

Vegetable stock ¾ cup
Orange zest (finely grated) 2 tbsp
Salt to taste
Pepper to taste

Spring Onions ½ cup
Lemon peel (grated) 2 tsp
Mint (Chopped) 2 tbsp
Method of Preparation
1.Combine the red bell peppers with onion, tomatoes and garlic and blend together.
2.Add vegetable stock, olive oil, orange juice, lemon juice, orange zest, salt and pepper. Puree together.
3.Chill and serve, after garnishing with spring onion, lemon peel and mint leaves.
